Meatloaf with Apricot Brandy Sauce PDF Print E-mail

This heirloom Passover meatloaf recipe combines the tangy flavor of sauerkraut with the sweetness of apricot sauce.

Ingredients:

1/4 cup vegetable oil
2 lbs ground beef
3 eggs
1 tbsp matzoh meal
1/2 cups sauerkraut, drained
1 tbsp ketchup
salt and pepper

Apricot Brandy Sauce (recipe below)

Directions:

Heat oil in a 9 x 12–inch baking dish AT 400 degrees F for 5 minutes. Remove from oven.

Mix together all ingredients and put into the hot oil ( to produce a nice crust). Reduce oven to 350 degrees and bake for 45 minutes, uncovered.

Slice and serve with Apricot Brandy Sauce.

Apricot Brandy Sauce:
1 can apricots, with syrup
1/4 cup Kosher for Passover Apricot Brandy, such as Carmel 777.

Cook apricots with brandy for 5 minutes until all the brandy is dissolved.

Yield: 6-8 servings
